Tater Tot Breakfast Casserole

An easy, cheesy weeknight meal that the kids will love!

If you are looking for healthy, this is not the recipe you want to use. But if you want simple and family friendly, then you might like this cheesy, gooey breakfast casserole. It's a favorite at my house and is on a regular rotation. We love sausage, cheese, and tater tots. What can I say?!

Quick tip, save about half a cup of your cooked sausage to make breakfast burritos on another day!

You need:

  • 1 lb ground breakfast sausage, home grown or store bought

  • 2-3 cups shredded cheese of your choice (I like cheddar or gouda.)

  • 2 cups milk

  • 4-6 eggs (depending on size) I use 6.

  • salt, pepper, and minced onion to taste (The sausage is already flavorful.)

  • 2 lb bag of tater tots (<--- see, not so healthy)

Brown your sausage and place into the bottom of a 9x12ish casserole dish. Spread your cheese on top of that. To save dishes, use a quart jar to measure out your 2 cups of milk, then add the eggs and seasonings. Mix it well, and then pour it on top of the cheese. Dump your bag of tater tots on top and spread them out.

Bake at 375* for about an hour. You want it to be done in the middle and not super jiggly.
